Power Without Compromise
Spitfire is a full-bodied, darker roast with unmistakable presence.
Designed for those who like their coffee strong, punchy, and unapologetic, this is a blend that delivers depth, weight, and intensity from the first sip to the last. Roasted to develop power without tipping into bitterness, Spitfire holds its own in milk and still shines as a bold espresso.
Where Lancaster is balance and reliability, Spitfire is attitude — confident, assertive, and built to perform when you want your coffee to make a statement.

Grind
Choosing the right grind is key to getting the best performance from your coffee.
To maintain freshness and consistency, Flying Coffee offers whole beans across our full range. Select coffees are also available pre-ground for convenience.
whole bean (recommended)
Whole beans give you the most control and the freshest results. If you grind just before brewing, this is always the best option — especially if you’re using an espresso machine.
ground coffee
Our ground coffee is produced to a precise, general-purpose grind, designed to perform well across most manual brewing methods, including:
Cafetière
Drip filter
V60
Aeropress
This grind delivers balance and reliability, making it ideal for everyday brewing.
Because espresso requires a much finer and more specific grind, we do not recommend using our standard ground coffee in espresso machines.
our approach
Like aviation, coffee performs best when everything is properly calibrated.
That’s why we keep our grind options intentional — not excessive — so you get consistent, repeatable results every time you brew.
Brew Ratios
Great coffee is about balance, not guesswork.
While taste is always personal, the ratios below are our flight-tested starting points designed to help you get the best performance from your Flying Coffee beans. From here, fine-tune to suit your preference.
recommended starting ratios
Espresso: 1:2 ratio of coffee to water
(Example: 18g coffee → 36g liquid espresso)
V60 / Pour-Over: 16g coffee → 240g water
Aeropress: 16g coffee → 240g water
Chemex: 32g coffee → 500g water
French Press / Cafetière: 60–65g coffee → 1 litre water
how to use this
Think of these ratios like flight parameters — they give you a stable, reliable starting point. From there, adjust grind size, dose, or brew time to fine-tune flavour and strength.
quick tips
-
Too strong? Add a little more water
-
Too weak? Increase coffee slightly
-
Bitter? Try a coarser grind or shorter brew
-
Sour? Try a finer grind or longer brew
our approach
At Flying Coffee, we focus on consistency and repeatability. These ratios are designed to deliver balanced results across our range, so you can enjoy great coffee without overthinking it.
